- I enjoyed this book. The recipes looked tasty, and I had already prepared some of them, or variations, so I know they work very well in cast iron. The instructions concerning heat applied to the skillet for cooking should be followed. I have two small comments that are not in the opening instructions. One, I use kosher salt to clean my pan, and it usually does a good job. Then I apply a thin coat of olive oil (to prevent rust). Two, if the pan is washed (follow the book's instructions) always completely dry the skillet before applying a thin coat of maintenance oil (to prevent rust). I dry mine on lo heat, then apply a thin coat of olive oil. Good book, good recipes!
- This book has really shed a whole new light on cooking with cast iron. I have always preferred to cook on cast iron. I found the maintenance and cooking tips to be really beneficial. Great addition to my cookbook collection.
- The Orange Ginger Chicken recipe does not list ginger as an ingredient. It does list garlic twice.
Some of the direction lists have unnecessary page breaks in the middle and an empty step. - I have a lot of passion for cooking with my array of tools, gadgets and special pans, so it was a nice surprise to get this book all about cooking with cast iron. They do require special care and when you know how to use them, they can make familiar dishes really stand out in texture, flavor and nutritional value. This book is an excellent resource and a great guide to learn to bring out the very best of your skillets!
- Cooking with cast iron has been around since the 5th century BC and is thought to have been invented in Ancient China. Seasoning your skillet is very important when it starts to look rusty or dull. Many great recipes beginning with breakfast and ending with desserts. Two of my favorites are Pecan Fried Catfish and Mushroom Pork Chops.
- I do have a cast iron skillet that I use for everything from toasting my bread to baking in the oven. This book made me realize that I have not been taking care of it. There are great tips that you can use. The recipes are varied and easy to cook.
- Absolutely worth a peek! Some of Granny's old tried and found true recipes are found ( and some slightly altered! I can assure you, my Granny never put no sugar in no cornbread!) here. - I'm crazy about cooking in cast iron. Found many recipes in here that I'd never thought to try in a skillet. Good pictures and clear instructions.
